Recipe for

Almond Paste Icing


Almond Paste Icing


  • 300 g (1 1/2 cups) Icing Sugar or Caster Sugar
  • 100 g (1/4 cup) Ground Almonds
  • 1 Egg White
  • 1 Egg Yoke
  • 20 ml (1 tablespoon) Sherry, Orange or Lemon Juice



You will need
A mixing bowl, a wooden spoon, a sifter, a board and a rolling pin along with a smoothing spatula and a brush



  • Sift sugar
  • Add almonds and mix well
  • Mix into a very stiff paste with egg yoke and liquid
  • Place on a board that has been dusted with icing sugar
  • Roll out to desired thickness
  • Brush cake with egg white and apply icing
