Recipe for

Barley Sugar


Ingredients
  • 6 cubes Sugar
  • half a Lemon

  • 450 g Sugar
  • 1 - 2 drops yellow Food Colouring
 

You will need
A large, heavy saucepan, a wooden spoon and a marble slab or large, heavy duty sheet of foil

 

Directions

  • Rub the sugar cubes on the lemon to absorb the full flavour of the zest.
  • Place the sugar cubes, water and sugar into the saucepan and stir over a gentle heat until the sugar has dissolved.
  • Increase the heat and bring to the boil without stirring.
  • Boil to 132 c

  • Remove from the heat and stir in the food colouring.
  • Leave to stand for a few minutes before pouring onto the oiled slab or foil.
  • When slightly cooled cut into appropriate strips with an oiled knife.
  • With lightly oiled, clean, hands twist each strip and bend into a walking stick shape.
