Brandy Snaps


  • 50g Granulated Sugar
  • 2 tablespoons Golden Syrup
  • 50g Butter
  • 50g Plain Flour
  • 1 pinch Salt
  • 1 1/2 level teaspoons Ground Ginger
  • 1 tablespoon Lemon Juice
  • Whipped Cream


You will need
A saucepan, a wooden spoon, a sifter, a number of baking trays and a spatula


  • Gently heat the butter, sugar and golden syrup in a saucepan
  • Remove it from the heat the moment the sugar and butter have melted
  • Sift the flour, ginger and salt into the mixture, add the lemon juice and mix well
  • Drop heaped teaspoons of the mixture onto greased baking trays
  • Allow plenty of room for them to spread.
  • Put no more than four dobs on each tray
  • Bake at 180c for 10 minutes then allow to cool for about a minute
  • Remove each from the tray with a spatula and quickly roll it around the handle of a wooden spoon
  • Fill with cream when cool
