Recipe for

Clean-up Soup


Ingredients
  • Leftover carcass from a roast chicken
  • 2 large onions
  • 1 bay leaf

  • Frozen peas or mixed vegetables
  • (Optional) carrot, potato, garlic, cabbage (Whatever you wish to clean-up)
 

You will need
A large saucepan, a wooden spoon, tongs, a cutting board, a sharp knife and a lot of imagination

 

Directions

  • Take the seasoning out of your chicken carcass and place the chicken in a large saucepan 3/4 filled with water
  • Add the roughly chopped onions and the bay leaf
  • Bring to the boil then simmer until the bits of chicken fall away from the bone
  • Carefully remove the bones from the water with your tongs

  • Allow to cool a little then remove all of the residual meat
  • Discard the bones and return the meat to the pot
  • Add your frozen or fresh veggies with your desired consistency of the finished soup in mind
  • Season to taste
  • Simmer until you are happy with its taste and consistency
