Recipe for

Curry and Rice Soup


Ingredients
  • 2 tablespoons Oil
  • 2 Onions
  • 1 or 2 clove/s crushed Garlic
  • 1 teaspoon Turmeric
  • 2 teaspoons Curry Powder

  • 1 cup boiled Rice
  • 1/4 teaspoon Ground Ginger
  • 4 cups Stock (beef or chicken)
  • 1 tablespoon Lemon Juice
  • Salt and Pepper to taste
 

You will need
A heavy saucepan, a garlic press, a sharp knife and cutting board

 

Directions

  • Thinly slice the onions
  • Heat the oil in a heavy saucepan and gently fry the onions until soft
  • Add turmeric, curry powder and ginger to the pan and continue frying for a minute
  • Pour in the stock and bring to the boil

  • Simmer for 10 minutes
  • Add the rice and simmer for a further minute or two until the rice is heated through
  • Add salt and pepper along with the lemon juice
  • Serve in individual bowls with crunchy bread rolls
