Grandpa Pencil's Recipe

Hot Cross Buns


Hot Cross Buns


  • 1/3 cup Skim Milk Powder
  • 1/3 cup Sugar
  • 175 ml Water
  • 50g Butter
  • 50g Compressed Yeast
  • 400g Plain Flour
  • 2 teaspoons Salt
  • 1/2 cup Sultanas


  • 1 teaspoon Gelatine
  • 1 tablespoon Sugar
  • 1 tablespoon Hot Water


 You will need
A Saucepan, a wooden spoon, a mixing bowl, plastic wrap, a sifter and oven trays


  • Mix the skim milk powder and sugar together in a saucepan and add 100 ml of water
  • Stir constantly while bringing to the boil
  • Add butter and remaining water, cool to lukewarm then add crumbled yeast
  • Sift flour and salt together then add the sultanas
  • Add the milk mixture and mix well into a soft dough. You may need to add more water
  • Knead well for 10 minutes
  • Place in a greased bowl, cover with plastic and stand in a warm place for 10 minutes
  • Divide into 16 even pieces in the shape of buns
  • Place on greased oven trays and allow to sit in a warm place until they double in size
  • Bake in a moderate oven, 200c - 230c for 15 to 20 minutes
  • Glaze immediately with gelatine and sugar dissolved in the hot water and pipe on icing cross
