Pumpkin Soup


Pumpkin Soup


  • 2 kg Pumpkin
  • 1 large chopped Onion
  • 2 cloves crushed Garlic
  • 1 pinch Curry Powder
  • 2 small Egg Tomatoes quartered
  • 2 Chicken Stock Cubes
  • 1.25 lt. Boiling Water


 You will need
A sharp large knife, a baking dish, a blender, a wooden spoon and a large saucepan


  • Peel pumpkin and cut into 3 cm pieces
  • Combine pumpkin, onion, garlic and tomato in a baking dish and drizzle with oil
  • Bake at 250C for 40 minutes
  • Blend pumpkin mix with crumbled stock cubes and 2 cups of water until smooth
  • Put mixture into a large saucepan with the rest of the water
  • Add a pinch of curry Powder
  • Stir over heat until hot
  • Serve with cream or yoghurt and fresh crusty bread
