Potato Salad


 


Potato Salad

Ingredients

  • 2 kg Potatoes
  • 125 ml Vinegar
  • 1 chopped Onion
  • 125 ml water
  • 125 ml Salad Oil
  • 2 sliced Onions
  • 125g Sour Cream
  • Salt and Pepper to taste
  • Finely chopped Parsley
  • 2 hard boiled Eggs sliced

 

 You will need
A large salad bowl, a large and a small saucepan, a sharp knife and a cutting board
 

Directions

  • Boil the potatoes in their skins until tender and slice thinly while still warm
  • Bring the vinegar, chopped onion and water to the boil in a small saucepan then remove from the heat
  • Place a layer of potatoes in a large salad bowl and then a layer of sliced onion.
  • Sprinkle salt, pepper a little oil and a few spoons of the vinegar mixture over
  • Continue layering until potato and onion is used
  • Gently fold in the sour cream
  • Garnish with the parsley and sliced egg
