Grandpa Pencil's Recipe

Uncooked Marzipan


Uncooked Marzipan


  • 350g freshly ground Almonds
  • 350g Caster Sugar
  • 350g Icing Sugar
  • 2 small eggs
  • 1 - 2 tablespoons strained Lemon Juice
  • half a teaspoon Vanilla Essence


 You will need
a mixing bowl, a wooden fork a flat clean work surface and some cling wrap


  • Sieve the icing sugar and mix well with the sugar and almonds in a mixing bowl.
  • Beat the two eggs.
  • Hollow out the centre of the dry products and add all of the other ingredients into it.
  • Mix well with the wooden fork before turning out onto a lightly sugared work surface.
  • Kneed well until smooth and free of cracks.
  • Work into desired shapes immediately or store in cling wrap until required.
