Recipe for
White Stock


Ingredients
  • 500 g Chicken Wings or Backs
  • 7 cups Water
  • 1 Onion
  • 2 Carrots

  • 1 Celery stick
  • 1 Bouquet Garni
  • 6 Peppercorns

 

 You will need
A large saucepan

 

Directions

  • Place the chicken bits into a large saucepan and cover with water
  • Bring up to a simmer
  • Remove any scum on the top of your simmering liquid then add vegetables, bouquet garni and peppercorns

  • Cover and simmer gently for 4 to 6 hours
  • Strain the stock into a bowl, allow to cool then refrigerate
  • When chilled, remove the fat from the surface
