Easy Christmas Pudding


Ingredients
  • 460g Currants
  • 460g Sultanas
  • 230g Raisins
  • 230g Citron Peel
  • 115g chopped Almonds
  • 460g Butter
  • 460g Brown Sugar
  • 9 Eggs

  • 150 ml Brandy
  • 230g Breadcrumbs
  • 230g Plain flour
  • 1 pinch Salt
  • 1 teaspoon Bicarbonate of Soda
  • 1/2 teaspoon grated Nutmeg
  • 2 teaspoons mixed spice
 

You will need
A large boiler of water, mixing bowl, wooden spoon, knife and cutting board and pudding cloth .

 

Directions

  • Clean and prepare fruit
  • Blanch and finely chop almonds
  • Cream the butter and sugar and add the well beaten eggs and brandy
  • Stir fruit in well
  • Add breadcrumbs, sifted flour, salt, soda, grated nutmeg and spice

  • Mix well together
  • Tie up in a strong pudding cloth being sure to leave some room for expansion
  • Place in boiler of boiling water and cook for 6 hours
  • Cook a further 3 hours on the day it is to be eaten
