Figgy Pudding


Ingredients
  • 250g Dried Figs
  • 200 ml Milk
  • 1 tablespoon Treacle
  • 150 g Flour
  • 100 g Brown Sugar
  • 100 g melted Butter
  • 1 teaspoon Baking Powder
  • 1 teaspoon Cinnamon
  • 1 teaspoon Nutmeg
  • 2 eggs
  • Rind of 1 Lemon
  • 50 g Breadcrumbs
 

You will need
Scissors, saucepan, mixing bowl, mixing spoon, 1 lt. pudding bowl, greaseproof paper, aluminium foil and string

 

Directions

  • Cut stems from figs
  • simmer figs in the milk for 25 minutes
  • Remove from heat and mix in treacle
  • In a mixing bowl mix flour, brown sugar, breadcrumbs, baking powder, cinnamon, nutmeg and the lemon rind
  • Add fig mixture along with butter and beaten eggs and mix well
  • Butter pudding bowl
  • Spoon in mixture
  • Cover with a layer of greaseproof then a layer of foil and tie securely
  • Steam for 2 hours
  • Turn out and dust with icing sugar
  • Serve with whipped cream
